White Fish Pasta
Ingredients:
500g White flaky fish ( Cod is a good option )
150ml white wine
200ml full fat crème fraiche
3 large shallots, diced
1 Medium sized leek
2 tablespoons of butter (1 to be melted)
2 teaspoon of chopped parsley
1 squeeze of fresh lemon juice
1 generous teaspoon Sassy Citrus and Thyme Salt
350g Tagliatelle Pasta
Directions :
Preheat oven to 200°.
Place fish in a baking dish, drizzle with melted butter.
Cover and bake until fish just begins to flake easily with a fork, about 15-20 minutes.
Melt remaining butter in a large wide-based pan over a gentle heat.
Add the shallots and leak, fry on high heat for about 3-5 minutes.
Lower heat, cover pan with lid and continue to cook for 8 to 10 minutes until tender. In simmering water cook pasta, it takes pasta 8-10 minutes for al dente texture.
Add the wine to the shallots and boil to reduce by half, stir in the crème fraiche and bring to the boil.
Season with salt and pepper then place in fish .
Strain pasta, add to pan with leak, fish and shallot.
Toss all together, coating the pasta in sauce.
Serve with a topping of lemon juice, parsley and Sassy Sea Salt.
