Sauteed Courgettes

Ingredients :

  1. Heat the oil in a large non-stick frying pan over medium heat. 
  2. Add the courgette and stir until golden.
  3. Add the onion and garlic.
  4. Cook for 2 minutes, shaking the pan occasionally, until onions softens slightly.
  5. Stir in the vinegar, remove from heat and sprinkle with salt 

Directions :

  • 500g (about 3) courgette - thickly sliced 
  • 1/2 red onion, thinly sliced
  • 2 garlic cloves finely chopped ( or 1 smoked garlic clove for extra flavor)
  • 1 teaspoon Sassy Salt Lady "Orange and Fennel" 
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar
