Sauteed Courgettes

Ingredients :
- Heat the oil in a large non-stick frying pan over medium heat.
- Add the courgette and stir until golden.
- Add the onion and garlic.
- Cook for 2 minutes, shaking the pan occasionally, until onions softens slightly.
- Stir in the vinegar, remove from heat and sprinkle with salt
Directions :
- 500g (about 3) courgette - thickly sliced
- 1/2 red onion, thinly sliced
- 2 garlic cloves finely chopped ( or 1 smoked garlic clove for extra flavor)
- 1 teaspoon Sassy Salt Lady "Orange and Fennel"
- 1 tablespoon extra virgin olive oil
- 1 tablespoon balsamic vinegar
